225g buckwheat flour
160g coconut sugar
100g ground almonds
1 tsp bicarbonate of soda
1 tsp baking powder
300ml oat milk
3 1/2 tbsp melted coconut oil
1 tsp cinnamon
1 tsp nutmeg
2 tsp ground ginger
1. Preheat the oven 180°, fan setting.
2. In a large bowl mix together the flour, coconut sugar, ground almonds, bicarb, baking powder, cinnamon, nutmeg and ginger. Mix well until there are no lumps.
3. Pour in the melted coconut oil and oat milk. Mix well until you have a smooth dough. Stir through the raisins.
4. Pour the mixture into the loaf tin and bake for 50 - 55 minutes.
